Greece`s most well-known grape variety, Assyrtico is made in a variety of styles, from fresh, crisp mineral whites to honeyed, nutty dessert wines known as Vinsanto. The island of Santorini is the grape`s spirtual home. Thanks to the high acidity found naturally in Assyrtico grapes wines can age for many years. Susceptibility to oxidation means that winemakers can create dark, rich sweet wines with coffee and chocolate characters.
