For all its size this is no bulk region, with many of Australia's finest wines produced in the state and most of the scientific research and development facilities located in and around Adelaide, the state capital. Bordered by the Great Australian Bight to the south, production is limited to the south-east corner of the state - it is simply too hot further north to produce wine capable grapes. There is a vast range of soils and growing conditions, thanks to topography and climate changes, and the state is capable of producing a broad spectrum of wines. Full-blooded Shiraz, bone-dry cool-climate Riesling, deep-fruited Cabernet Sauvignon, lusty Grenache, and brisk, elegant Adelaide Hills Chardonnay are just the tip of the iceberg.

The vineyards reach altitudes of 500 metres above sea level and the slopes exposure to sunlight in the valleys and dips of the hills makes for many varied mesoclimates in the region. Site selection for the region's growers is critical, as spring frosts and cold nights can cause problems for the grapes. Wines gain good concentration from a long, slow ripening season, and the region's white wines are characterised by natural acidity and good purity of fruit. Sauvignon Blanc has found success here, alongside Riesling, Semillon, Pinot Noir and Chardonnay. When planted in the right areas, the warmest years produce excellent varietal Shiraz, Cabernet Sauvignon and Merlot wines.

From the lean, crisp wines of Chablis, to the exceptional dry Blancs de Blancs of Champagne and the buttery, rich, oaky wines of the warmer regions of California, Chardonnay wines exhibit a full spectrum of flavours and styles. As a fairly neutral grape, it is the land, soil, location, climate and winemaker that have the biggest impact on this famous grape.
