The House of Billecart Salmon is situated in Mareuil-sur-Ay and was established in 1818 by Nicolas-Francois Billecart. It is one of the few remaining Champagne houses to be family-owned. It is a small champagne house with a growing reputation. The family still uses the traditional methods used in Champagne production whilst incorporating modern winemaking techniques. Meticulous in their approach from the use of their own cultured yeast to its long, slow, cool fermentation, ensure that the family has 100% control of production.
