Domaine Rossignol-Trapet
Archives show that the Rossignol family has had vineyards in Volnay since the 16th Century and the Trapet have owned vineyards in Gevrey Chambertin from the 18th century.
This accrued knowledge of their vineyards has been handed down from one generation to the next.
Now run by Nicolas and David Rossignal. They now destem 100%, pick slightly later to make richer and enhancing the texture of the wines. In the vineyards they have converted to a Biodynamic (organic) Viticulture and are now certified as organic and biodynamic.
The red wines are racked less often than before and bottled later. Up to 50% new oak is used for the premier cru wines.
The vineyards of Domaine Rossignol-Trapet are found in Gevrey-Chambertin in Burgundy, they have a total of 14 hectares under vines.
