Billecart-Salmon
Established in 1818, Billecart-Salmon is a small, family run house and one of the wine trade's best kept secrets. Most of Billecart-Salmon's fruit comes from a small vineyard, with the grapes supplemented from the Marne Valley and the Montagne de Reims. Their production techniques are meticulous, from the use of their own cultured yeast to the long, slow, cool fermentation. Billecart-Salmon is one of the few remaining Champagne houses to be owned by the original family.
